This recipe using Tosteds roasted Laura® Soybeans makes a wonderful protein bar that’s quick and easy to make.
1 cup of lightly salted or unsalted Tosteds brand roasted Laura® Soybeans
1/2 cup oatmeal
1/2 cup ground flax
1/2 cup chia seeds
1 & 1/2 cup plain protein powder
1 cup fresh ground peanut butter
11 ounces of dates
1/2 cup raw honey or maple syrup
2 tsp of vanilla extract
1/2 cup dark chocolate
1 tbsp cocoa butter or coconut oil
Soak dates in hot water for 15 minutes to soften, then drain and take out pits of dates.
Blend Tosteds, oatmeal, flax, chia seeds and protein powder in food processor
Add dates, peanut butter, honey or maple syrup and vanilla to food processor and blend with dry ingredients
Place parchment paper in 9X9 or 8X8 pan
Push mixture in prepared pan using a piece of wax paper so it won’t stick to your hands
Refrigerate for 1/2 hour
While bars are setting, melt dark chocolate and cocoa butter (or coconut oil) in a pan on low heat.
Take bars out of refrigerator and pour melted chocolate on top, spreading across bars to for a thin layer.
Refrigerate for another 1/2 hour
take out of pan and cut in 16 square, wrap individually and place in freezer.
Each bar has 325 calories and 12 grams of protein.
