These tasty treats are just sweet enough in a chewy, but firm ‘bite’. The roasty-toasty flavor of the salted Tosteds and chocolate are key and the original recipe is great, however you can replace the apricots with cranberries and the almonds with cashews or walnuts.

About 40 Energy Bites
1 1/2 cups Tosteds lightly salted
1 cup sliced dates (pitted Deglet Noor or Medjool)
1 cup sliced dried apricots
1/3 cup raisins
1/2 cup whole almonds
1/2 cup dairy-free chocolate chips
Additional dairy-free chocolate chips for ‘button’ garnish
Place all the ingredients in a food processor in the order listed and process until mixture is cohesive and holds together. Roll into one tablespoon sized balls and place on wax paper or parchment lined cookie sheet, pressing a chocolate chip in the center. Store in the freezer! These delicious chocolate treats are ready to eat in just a few minutes!
