Spinach Okara Burgers

What to do with that left over okara (soybean solids after making soymilk).  Here is a delicious recipe to make Spinach Okara Burgers from my good friend Marie Oser at VegTV.

Start with 2 and 1/4 cups of Okara (from one batch of soymilk using a machine).  1 – 15 oz can of garbanzo beans drained (reserve 1/4 cup of the bean liquid).  Mash with potato masher. 3 cups cooked brown rice.  1 medium onion chopped. 5 cloves of garlic minced.  1 cup chopped baby spinach.  1/3 cup nutritional yeast.  1/2 tsp of sea salt.  3 tbsp of flax seed and 1/2 cup of water mixed in small blender then add to mix.  Reserved 1/4 cup bean liquid.  1/2 cup of corn meal.  2 tbsp of baking powder.  1 tbsp of cilantro.

Mix thoroughly.  Spray baking pan with olive oil then dust with corn meal.

Form into patties and preheat oven to 425F.

Dust tops of patties with corn meal.

Bake one hour turning patties halfway through baking time.
