Here is an easy DIY recipe for Tosteds and date clusters covered in dark chocolate. Nut free and gluten free and made with roasted Laura® soybeans.
Ingredients:
10 ounces of dates (I use medjool dates but you may use whatever dates you have available)
1 Cup of Tosteds roasted Laura® Soybeans)
1 Cup of your favorite dark chocolate (I used Manjari from Valhrona)
A food processor
Baking sheet with parchment paper
Bowl
Rubber spatula
Procedure:
Rinse and pit the dates then soak in water for 10 minutes to soften
Pour off the liquid and rinse the dates
Put dates into food processor and finely chop
Add 1 cup of Tosteds
Form into small discs about 1.25 inches in diameter and about 1/2 inch tall
Now melt chocolate in microwave at 20 second intervals until smooth and creamy
Pour melted chocolate over clusters until almost completely covered.
Put covered clusters into freezer until hardened, about 15 to 20 minutes (depends on your freezer).

For storage, I suggest keeping them in freezer until you want to consume.
