Donuts made with Laura® soy milk and okara… Delicious and Easy!

On my recent visit to Japan I came across some wonderful soy milk okara donuts at a tofu shop that uses non gmo soybeans from our family farm.  They were delicious!  The tofu maker told me that in the past they would have to pay for discarding the left over okara from making soy milk, then they decided to start making these donuts using the left over okara and now they sell them at their tofu shop and also in local stores.  In all the years I have been traveling to Japan I had never seen this before.  The recipe is easy and requires ingredients you would probably already have in your cupboards.  I forgot to ask the tofu maker for the recipe but I found a soy milk okara recipe at www.supernummy.com/japanese-okara-donuts  I changed a few ingredients to make the recipe vegan and the donuts turned out great!  You can have fun with them by adding flavors, berries or let your imagination go to work.

Recipe:

1/2 cup of flour

1/4 cup of spelt flour

2 teaspoons of baking powder

1/2 cup of okara (the solids left over after straining your soy milk)

3 tablespoons of your favorite vegetable oil  (instead of butter)

4 tablespoons of dark brown sugar

2 tablespoons of ground flax blended with 4 tablespoons of water. (egg substitute)

4 tablespoons of Laura® soy milk

Directions:

1). Pre-heat oven to 360 degrees F

2). Combine flours and baking powder into a bowl.

3). Beat vegetable oil with sugar, then add the flax blended with water, soy milk and okara.  Add in the flour mixture and mix until smooth.  Here is where I add flavorings such as vanilla, cinnamon or experiment with pieces of raspberries, blackberries or any fruit or nuts.

4). Use a pastry bag and medium tip to fill the donut tray or you may fill a ziplock bag with the batter and cut off corner.

5). Spray your donut pan (I use a silicone donut baking sheet) with cooking spray.  Pipe the batter into the donut cavities about halfway full.  Bake for 15 minutes.  Flip onto a cooling rack to cool.

6). Enjoy!!!
